Healthy Vegetarian Recipes – The Delicious Vegetable Omelette and Quesadilla Recipes



Being vegetarian is not only healthy, but can be exciting because you get to prepare all these great meals that you normally wouldn’t. Vegetable omelette and quesadillas are two vegetarian meals that delicious and easy to prepare.

Below are the recipes:

1. Vegetable Omelette

The best way to make a perfect omelette is to make it in a really good skillet. Non-stick is the best but not the only choice. You can use stainless steel, plain or enamelled iron or treated aluminium. I like to serve omelettes with 2 slices of 12-grain bread.

Ingredients

o 2 eggs
o 3 tbsp milk
o Big pinch of salt
o Big pinch of black pepper
o 1 tbsp butter
o ? cup green bell pepper
o ? cup red bell pepper
o ? cup onion
o Grated cheese to taste (optional)

Directions:

- In a medium sized mixing bowl, beat the eggs, salt, pepper, green and red pepper and onion with a fork until blended; do not over mix.

- Melt the butter in a 7 to 8 inch pan over medium-high heat. Make sure the butter covers the base of the pan (you can do this by tilting the pan). When the foam has subsided, pour in the egg mixture.

- Tilt the pan again to make sure that the eggs run around the entire base of the pan and a little onto its sides. Let the eggs set for at least 45 seconds before flipping, do the same for the other side.

- Once done, transfer onto a plate and sprinkle grated cheese on top, if using, and serve immediately.

Serves 1

2. Quesadillas

Stored in a sealed container in the fridge, before fried, they will keep for 1 day.

Ingredients

o 1 cup extra-sharp cheddar, grated
o 1 cup Monterey Jack cheese, grated
o 6 ten-inch flour
o 3 tbsp unsalted butter

Directions:

- In a small bowl, toss cheese together, using your hands. On top of a cutting board, place 3 tortillas beside one another and leaving an edge, about 1 inch thick, evenly divide the cheese mixture between all three of the tortillas.

- In a non-stick skillet, melt ? tbsp of the butter over medium heat. Place the other 3 tortillas over the ones coated with cheese. Add one filled tortilla to the pan and fry until both sides turn a golden-brown color. Once done, add another ? tbsp of butter and repeat for the next 2 filled tortillas.

- Once done frying, place onto paper towels and pat dry. Cut fried tortillas into eighths, place onto individual plates and serve immediately.

Delicious Vegetarian Dessert Recipes



Traditional Portuguese desserts are rich, delicious and fit perfectly with a vegetarian diet. Here are a few examples to add some sweets to your meals.

Bolo de Bolacha Chocolate Roll

200g plain tea biscuits 250g sugar 150g butter 1 tsp lemon juice 1 tbs milk 75g powdered chocolate 1 tsp coffee powder 1 egg, separated

In a mixing bowl, combine sugar and butter until well blended. Stir in lemon juice, coffee powder, milk, egg yolk and chocolate powder. Mix until everything is thick and creamy.

Crush tea biscuits into small pieces (no larger than 1 cm) and gently fold them into the creamed chocolate mixture.

Lay out a large piece of non-greased paper on a flat surface. Lightly sprinkle it with sugar. Place your dough in the center, and use the paper to form it into a thick roll. Let it chill in the refrigerator for at least 5 hours before you start slicing it.

This is a very easy cake recipe and perfect for when you need to take a dessert to a party or picnic.

Makes 8 servings. Preparation time is 30 minutes.

Goji Berry Layer Cake

2 tbs blackcurrant jam 300ml whipping cream 250g self-rising flour 200g caster sugar 6 eggs, separated 50g Goji berries 1 lemon 50g butter 2 bananas 1 kiwi fruit 1 vanilla pod

Stir together sugar, lemon zest, egg yolks and the seeds from the vanilla pod. Then add flour and butter, and stir to combine. Mash one of the bananas, and add that into the mix along with most of the Goji berries (save about a dozen of them out for decorating the top of the cake).

In another bowl, beat the egg whites until they are firm, then fold them into the batter. Grease two round cake pans, and pour the batter into each of them equally. Bake at 210C for about 20 minutes.

Turn off the heat, but leave both cakes in the oven for another minute. Then take them out, and let them cool for 2 more minutes before turning them out of their pans. Place one of the cake layers on a plate, and spread a layer of jam on the top. Let the cake cool for another 10 minutes after that.

Slice the bananas, and spread them out over the layer of jam. Whip the cream, and spread thickly over the slices of banana. Gently set the other cake section on top, but don’t press it down. Top the cake with the remaining whipped cream and decorate with slices of kiwi and the last of the Goji berries.

Makes between 4 and 6 servings. Preparation time is 40 minutes.
